For the cheesecake layer::

  • 2 large eggs
  • 1 tbsp flour
  • 1/3 cup sugar (sifted to remove lumps)
  • 3/4 tsp vanilla

Instructions
 

  • Preheat your oven to the temperature specified on the brownie mix box (typically 350°F). While the oven heats, prepare the brownie batter according to the package directions, combining the brownie mix with 1 large egg, oil, water, and salt in a bowl. Mix until just combined—don't overmix, as this can make brownies tough. Set the brownie batter aside.
  • While the oven continues heating, beat the cream cheese in a separate bowl with an electric mixer until smooth and creamy—this typically takes 1-2 minutes and removes any lumps that could create a grainy texture. Add 2 large eggs, flour, sifted sugar, and vanilla extract, then beat until just combined. I like to sift the sugar first to ensure the cheesecake layer stays perfectly smooth without any crystalline texture.
  • Prepare a baking pan according to the brownie mix box instructions (usually an 8x8 or 9x13 inch pan, greased or lined). Spread about two-thirds of the brownie batter from Step 1 into the prepared pan, leaving an even layer. Pour the cheesecake filling from Step 2 over the brownie batter, spreading it gently to create an even layer. Drop spoonfuls of the remaining brownie batter over the cheesecake layer, then use a knife to create swirls by dragging it through the layers in a zigzag pattern—this creates those beautiful marble veins and distributes both flavors throughout.
  • Place the pan in the preheated oven and bake for 35-40 minutes, until the top is golden brown and a toothpick inserted into the brownie portions (not the center cheesecake) comes out with just a few moist crumbs—you want the cheesecake slightly underbaked for that creamy texture.
