For the pasta and sauce

  • 10.6 oz fusilli
  • 1.5 tbsp olive oil
  • 1 onion (finely diced into 1/4-inch pieces)
  • 3 garlic cloves (minced)
  • 1 carrot (peeled and finely grated)
  • 1 celery stalk (finely diced)
  • 14.1 oz baked beans
  • 14.1 oz tomatoes (crushed or diced)
  • 1.5 tbsp tomato paste
  • 1.5 tsp paprika
  • 0.75 cup water
  • 1 tsp dried oregano
  • 1 tsp balsamic vinegar

For the topping

  • 9 oz mozzarella (freshly shredded)
  • 2 tsp fresh parsley (chopped)
  • 0.5 tsp coarse black pepper

Instructions
 

  • Preheat your oven to 200°C (180°C fan/390°F). While it heats, finely dice the onion into 1/4-inch pieces, mince the garlic cloves, peel and finely grate the carrot, and finely dice the celery stalk. Shred the mozzarella cheese fresh if not already done, and chop the fresh parsley. Having everything prepped and ready ensures smooth cooking without interruptions.
  • Heat the olive oil in a large pan over medium heat. Add the diced onion, minced garlic, grated carrot, and diced celery. Sauté for 5 minutes, stirring occasionally, until the vegetables are softened and fragrant. This creates a flavorful foundation (called a soffritto) that will give your sauce depth and richness.
  • Add the tomato paste to the vegetable mixture and stir for 30 seconds to cook it slightly and deepen its flavor. Pour in the crushed tomatoes, baked beans, water, paprika, dried oregano, and balsamic vinegar. Stir well to combine. Bring to a boil, then reduce heat and simmer for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly. I find that the balsamic vinegar adds a subtle sweetness and complexity that balances the acidity of the tomatoes beautifully.
  • While the sauce simmers, bring a large pot of salted water to a rolling boil. Add the fusilli and cook for 8 minutes, stirring occasionally to prevent sticking. The pasta should be tender but still have a slight bite to it. Drain the pasta in a colander but do not rinse it—the starch helps the sauce cling to the noodles.
  • Add the drained pasta from Step 4 to the bean sauce from Step 3 and stir until well combined. Transfer the entire mixture into a baking dish (approximately 9x13 inches or similar size). Spread it evenly to ensure even cooking and consistent texture throughout.
  • Sprinkle the freshly shredded mozzarella evenly over the pasta mixture, followed by the chopped fresh parsley and coarse black pepper. Bake in the preheated oven for 10 minutes, until the cheese is melted and lightly golden on top. I like to watch for that moment when the cheese just begins to brown around the edges—it adds a subtle toasted flavor that elevates the whole dish.
  • Remove the baked bean pasta from the oven and let it rest for 2-3 minutes before serving. This brief rest allows the cheese to set slightly and makes serving easier without the pasta falling apart.
