For the dip base

  • 5 jalapeños (seeded and diced into 1/4-inch pieces)
  • 10 oz cream cheese (Philadelphia recommended for a smoother melt)
  • 1 cup sour cream
  • 2 1/2 cups cheddar (freshly shredded for better melting)
  • 4 tsp minced garlic
  • 1/2 tsp smoked paprika
  • 1 tsp fresh lime juice

For the mix-ins and garnish

  • 6 slices bacon (naturally smoked, cooked crisp and crumbled)
  • 3 tbsp cilantro (finely chopped)

  • While you gather your ingredients, cook the bacon in a skillet over medium-high heat until crispy, about 8-10 minutes. Once cooked, transfer to a paper towel-lined plate to drain, then crumble into bite-sized pieces. While the bacon cooks, prepare the jalapeños by slicing them lengthwise, removing the seeds and white membranes with a spoon (this reduces heat if you prefer milder), and dicing into ¼-inch pieces. I like to wear gloves when handling jalapeños to avoid any lingering heat on my hands!
  • Add the cream cheese, sour cream, freshly shredded cheddar, diced jalapeños, minced garlic, smoked paprika, and lime juice directly to your crockpot. Stir everything together until well combined—the mixture should be somewhat lumpy at this point, which is fine. The cream cheese will soften and melt as it cooks, creating a smooth, creamy base. I recommend using freshly shredded cheddar rather than pre-shredded, as it melts much more smoothly without the anti-caking agents.
  • Cover the crockpot and cook on low for 2 hours, stirring every 30 minutes to ensure even heating and prevent the edges from overcooking. This gentle heat allows the cream cheese to melt completely and the flavors to meld without any scorching. By the end, the dip should be smooth, creamy, and hot throughout.
  • Stir in the crumbled bacon from Step 1 and the finely chopped cilantro until evenly distributed throughout the warm dip. Taste and adjust seasonings if needed—a squeeze more lime juice or a pinch of salt can brighten the flavors. Transfer to a serving dish if desired, or serve directly from the crockpot set to warm to keep it at the perfect temperature.
